I've made cookies from Trader Joe's excellent brownie mix before so I kind of assumed I could use cake mix as well. As my grand notion of making the "'nana pudding" cake recipe from the box evaporated, I thought hmmm...maybe cookies? Dad's as much of a cookie monster as I am, possibly more <g>. Anyways, to turn the cake mix into cookies, all I did (after Googling how) was add two eggs and 1/2 cup of vegetable oil to the mix, mix it all together, drop a tablespoon of batter on a cookie sheet (and repeat) and bake at 350° for 12-15 minutes.

food insecurity, all things are relative. Sure, plenty of people are actually starving and your dad isn’t going to let you starve. Others may be hungrier, but you’ve had to change your eating habits a lot in the last year. Like many people, you’ve had to give a lot of food things up. I can see how that could make you feel food insecure. Food prices skyrocketed at the same time that your income decreased. I don’t think you should dismiss your feelings of food insecurity as unreasonable. This is especially true if food is often comforting to you.

I appreciate your kind words--thank you! And yes, eating has always been a source of comfort to me so when the amount of food in the house decreases significantly (the cupboards are barer than usual too), it makes me a little twitchy. Pretty sure I get this from Mom...the cupboards were always full to bursting after she married Dad because the night she, as a single mother, had only one can of soup to split between herself and my two siblings scarred her emotionally, hence overbuying food later when she could afford it.
