watermelon-mint-feta skewers for my brother's birthday party. Despite not liking watermelon, I got the ingredients (except for the mint)...the feta I bought was a bit too crumbly to stay on the skewers, but I pivoted and made a salad and it was a hit. While I didn't bring any home, I *did* taste my creation and...I actually liked it. I liked it enough to make it again. And again. And again. And again. And now I'm eating watermelon-mint-feta salad like it's my job 😁
I have to thank you because a) this dish is helping me eat more "clean" and healthy, b) it's giving me a reason to use some of the mint growing crazy in the front flower bed and c) I actually found a way to LIKE watermelon. I've eaten more watermelon in the last month than I have all the rest of my life combined. So thank you again for a wonderful suggestion (and a new addition to my summer menu)!
