I remember reading about George Washington Carver trying to figure out what to do with peanuts which he said were needed to replenish the soil that had been warn out by growing cotton. Owners didn't want to plant peanuts because they were a useless crop. Hundreds of uses for peanuts and a new market for a crop to replenish the soil.
Americans don't use much soy (Not a fan of tofu, for example.), but there may be dozens or thousands of ways to process the crops to make them worth something. The farmers may have to take a DPA (Defense Production Act) - type payment that won't be the same as what they'd make if they sold them to China, but it may keep them on their farms until a new market is developed.
We may have to think our way out of this...that means we're in trouble.
